Spanish Chicken and Couscous

  • 6-8 chicken thighs, cleaned

  • 1 onion, thinly sliced

  • 1 cup Israeli couscous

  • 3 cloves garlic

  • 2 peppers, seeded and sliced thinly

  • 1 can of corn, drained

  • 15 oz can of tomato sauce

  • 1 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon cumin

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon oregano

  • 1 teaspoon paprika

  • 1/4 cup honey

  • 1/4 cup oil

  • Chopped parsley /cilantro and lime juice to finish

  1. In an oven proof baking pan layer the onions, peppers, corn and couscous under the chicken.

  2. Top with tomato sauce, spices honey and oil and mix to coat. ensure the chicken remains skin side up.

  3. Bake covered at 400F for 45 minutes. Then uncover and bake another 25 minutes.

  4. Remove from the oven. Fluff with a fork and top with parsley/ cilantro and lime juice.
