Fluffy Rolls
¾ cup vegan yogurt or yogurt warmed to lukewarm temperature
¼ cup water
1 tablespoon instant yeast
4 tablespoons sugar
1 egg
¼ cup vegan butter
1 teaspoon salt
3.5 cups bread flour
Topping:
1 egg
1 tablespoon honey
2 tablespoon vegan milk
Instructions:
In a large bowl, add the yogurt, water, yeast and sugar. Leave about 5 minutes so that the yeast can start to proof.
Then add in the egg, vegan butter and salt. Pour in the flour slowly as you mix everything together. Once all the flour is added in, knead until smooth for about 10 minutes.
Alternatively, you can do this in a stand mixer fitted with a dough hook for about 5 minutes.
Place in a greased bowl, cover and allow to rise for about an hour or until doubled.
Divide into 12-14 pieces and roll into smooth balls. Place in a greased 9x13, cover and allow to rise another hour.
Mix an egg, honey and milk in a bowl. Brush over your rolls. Bake at 350° F for 20-25 minutes or until golden, cool before serving.
