Sheet Pan Nachos With Queso

  • 1 bag tortilla chips 

  • 1 cup shredded cheddar cheese 

  • 1 bunch scallions thinly sliced 

  • 1 cup grape tomatoes, halved 

  • ½ cup corn 

  • 1 jalapeño, sliced 

  • 2 limes, sliced into wedges 

  • 1 avocado, cubed 

  • 1 jar salsa 

  • Sour cream, to top 

  • Cilantro 


Queso 

  • ½ cup butter 

  • 2 cups shredded cheddar 

  • ⅓ cup sour cream 

  • ¼ cup juice of pickled jalapeños 


  1. In a pot melt the butter over a low flame. Add the cheese and stir until melted. Stir in the sour cream and pickled jalapeño juice until uniform and smooth. 

  2. Lay your chips on a sheet pan layered with parchment paper 

  3. Top with scallions corn and cheddar cheese 

  4. Place into the oven at 350F for 8-10 minutes or until the cheese is melted.

  5. Top with tomatoes, jalapeno, avocado, lime wedges, sour cream and cilantro.

  6. Serve with salsa and warm Queso
