No Cook Pad Thai

Dressing: 


  • 1/2 package thin rice noodles soaked in hot water for 5 minutes till soft 

  • ¼ cup prepared tamarind paste (ou) or ¼ cup tamarind with 2 tbsp sugar 

  • Juice of 1 lime 

  • 2 cloves garlic, grated 

  • 1 tbsp honey 

  • ½ tsp salt 

  • ½ tsp chili powder 

  • ¼ tsp cayenne pepper 

  • ¼ tsp white pepper (or more to taste) 

  • 2 tbsp soy sauce 

  • 2-3 tbsp oil 

Salad 

  • 1 mango thinly sliced 

  • 1 Persian cucumber, julienned or thinly sliced 

  • 1 jalapeño, thinly sliced 

  • ½ cup shelled edamame 

  • 4 scallions, thinly sliced 

  • ½ package Kani, shredded 

  • ¼ cup cilantro, chopped 

  • ¼ cup peanuts, chopped 


  1. Mix the ingredients for the dressing together. 

  2. Adjust seasoning to taste.

  3. Toss all the salad ingredients and pour the dressing on top.

  4. Enjoy room temperature or chilled.
