No Cook Pad Thai
Dressing:
- 1/2 package thin rice noodles soaked in hot water for 5 minutes till soft 
- ¼ cup prepared tamarind paste (ou) or ¼ cup tamarind with 2 tbsp sugar 
- Juice of 1 lime 
- 2 cloves garlic, grated 
- 1 tbsp honey 
- ½ tsp salt 
- ½ tsp chili powder 
- ¼ tsp cayenne pepper 
- ¼ tsp white pepper (or more to taste) 
- 2 tbsp soy sauce 
- 2-3 tbsp oil 
Salad
- 1 mango thinly sliced 
- 1 Persian cucumber, julienned or thinly sliced 
- 1 jalapeño, thinly sliced 
- ½ cup shelled edamame 
- 4 scallions, thinly sliced 
- ½ package Kani, shredded 
- ¼ cup cilantro, chopped 
- ¼ cup peanuts, chopped 
- Mix the ingredients for the dressing together. 
- Adjust seasoning to taste. 
- Toss all the salad ingredients and pour the dressing on top. 
- Enjoy room temperature or chilled.
