No Cook Pad Thai
Dressing:
1/2 package thin rice noodles soaked in hot water for 5 minutes till soft
¼ cup prepared tamarind paste (ou) or ¼ cup tamarind with 2 tbsp sugar
Juice of 1 lime
2 cloves garlic, grated
1 tbsp honey
½ tsp salt
½ tsp chili powder
¼ tsp cayenne pepper
¼ tsp white pepper (or more to taste)
2 tbsp soy sauce
2-3 tbsp oil
Salad
1 mango thinly sliced
1 Persian cucumber, julienned or thinly sliced
1 jalapeño, thinly sliced
½ cup shelled edamame
4 scallions, thinly sliced
½ package Kani, shredded
¼ cup cilantro, chopped
¼ cup peanuts, chopped
Mix the ingredients for the dressing together.
Adjust seasoning to taste.
Toss all the salad ingredients and pour the dressing on top.
Enjoy room temperature or chilled.
