Homemade Pita
Homemade Pita:
2 cups flour
½ cup whole wheat or spelt flour
1 cup warm water
½ teaspoon salt
2 teaspoons sugar
2.5 teaspoons dry yeast
2-3 tablespoon oil plus more for coating
Zaatar Oil:
2 teaspoons zaatar
Zest of 1 lemon
¼ cup oil
¼ teaspoon salt
Cibur:
2 soft boiled or poached eggs
½ cup labne
1 clove garlic, minced
¼ teaspoon salt
Couple grinds black pepper
A pinch of aleppo pepper
A pinch of zaatar
Olive oil for drizzling
Fresh sprigs of dill
In a large bowl mix the flours with the yeast, sugar and water together. Add in the oil and salt and mix until a round ball forms. Knead for about 10 minutes adding another tablespoon of oil if too sticky.
The dough should be smooth and supple. Coat in oil.
Cover with a damp towel and allow to sit for an hour to rise.
Heat an oven-proof frying pan or sheet pan to 500 °F.
Divide into 6 portions and form each into a ball on a floured surface. Cover and rest for 10 minutes.
Roll out into a circle about 7-8 inches wide. Place gently on the hot pan and cook for 3 minutes or until the edges are golden.
Place on a plate lined in a towel and cover. Repeat until all the pita rounds are cooked.
Zaatar oil:
Mix ingredients and brush over warm pita
Cibur:
Mix the salt, lebne and garlic together.
Place the eggs on top and drizzle with oil, dill and remaining spices.
Serve with fresh pita
