SWEET AND SOUR MEATBALLS
Sauce
1 18 oz jar grape jelly
1 15 oz can tomato sauce
3 tbsp apple cider vinegar
2 tbsp tomato paste
2 tbsp brown sugar
½ teaspoon chili powder
¼ tsp allspice
½ teaspoon garlic powder
1 tsp salt
Meatballs
2 lb. Ground beef
1 teaspoon salt
1 egg
2 tbsp tapioca starch
1 tsp paprika
½ tsp garlic powder
In a pot heat all the sauce ingredients. And bring to a boil then reduce to a simmer.
In a bowl mix all the meatball ingredients together until just combined. Don’t over mix.
Form small penny size meatballs and drop into the sauce. Don’t mix the sauce, just gently press down to fit more meatballs. Once all your meatballs are formed in the sauce press gently over the top to cover in sauce.
Cover the pot and simmer for 20 minutes, covered. Then uncover the pot, stir until all the meatballs are coated and then simmer uncovered for 15 more minutes until the sauce is glossy and then serve.
