Beet Salad
1 cup raw beets, peeled and diced
1 cup cooked beets, peeled and diced
¼ cup pecans
2 tbsp craisins
2 cloves garlic, minced
3 scallions, sliced
3 tbsp dill, chopped
2 tbsp mint, chopped
3 tbsp parsley, chopped
¼ cup pomegranate seeds
Salt to taste
1 tbsp honey
2 tbsp balsamic vinegar
3-4 tbsp oil
Add all ingredients to a bowl and mix. Serve chilled.
