Spring Chopped Salad

  • 1 (15 oz.) can Liebers corn

  • 1 (14 oz.) can Liebers hearts of palm, diced

  • 1/4 cup Liebers gherkins, diced

  • 1 red pepper, seeded and diced

  • 2 scallions, ends trimmed and diced

  • 2 cups snow peas, diced

  • 1/4 cup Liebers avocado oil

  • 1/4 cup Liebers vinegar

  • 3 tablespoons sugar

  • 1 teaspoon salt

  • 1/2 teaspoon sumac

  • Tortilla chips for serving

  1. Add all your vegetables to a bowl.

  2. Top with the oil, vinegar, sugar, salt and sumac.

  3. Allow to sit for 15 minutes in the fridge before serving for best results.
