Sheet Pan Quesadillas
Sheet Pan Quesadillas:
2 tbsp oil
1 onion, diced
3 cloves garlic, moved
½ teaspoon, paprika
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon chili powder
1 teaspoon salt
1 package impossible meat
1 can kidney beans or black beans drained and rinsed
1 diced jalapeno, optional
1 package large tortillas
2 cups shredded cheese
Toppings :
Cilantro
Scallions
Avocado
Sour cream
Limes
Pico de gallo
In a large frying pan, heat the oil. Then add the onion and sweat for about 2-3 minutes over medium heat. Add the garlic and saute until fragrant, about 1 minute. Add the spices and saute another minute until fragrant.
Add the impossible beef and saute another 3-5 minutes or until lightly browned. Add the beans and toss to heat.
Lay your tortillas overlapping on a sheet pan. Spoon in your bean-”beef” filling and then top with cheese.
Lay a tortilla in the center and then Fold the tortillas over your mixture to close. Top with a piece of parchment paper and then top with a sheet pan to weigh it down.
Bake at 350℉ for 25 minutes. Then remove the sheet pan and parchment paper, spray the top of your tortillas with Pam and bake for another 5-10 minutes or until crispy and golden. Slice and serve with desired toppings.
