Sheet Pan Quesadillas

Sheet Pan Quesadillas:

  • 2 tbsp oil

  • 1 onion, diced 

  • 3 cloves garlic, moved 

  • ½ teaspoon, paprika 

  • ½ teaspoon onion powder 

  • ½ teaspoon garlic powder 

  • ½ teaspoon chili powder 

  • 1 teaspoon salt 

  • 1 package impossible meat 

  • 1 can kidney beans or black beans drained and rinsed 

  • 1 diced jalapeno, optional 

  • 1 package large tortillas 

  • 2 cups shredded cheese 


Toppings : 

  • Cilantro

  • Scallions 

  • Avocado 

  • Sour cream 

  • Limes 

  • Pico de gallo 


  1. In a large frying pan, heat the oil. Then add the onion and sweat for about 2-3 minutes over medium heat. Add the garlic and saute until fragrant, about 1 minute. Add the spices and saute another minute until fragrant. 

  2. Add the impossible beef and saute another 3-5 minutes or until lightly browned. Add the beans and toss to heat. 

  3. Lay your tortillas overlapping on a sheet pan. Spoon in your bean-”beef” filling and then top with cheese. 

  4. Lay a tortilla in the center and then Fold the tortillas over your mixture to close. Top with a piece of parchment paper and then top with a sheet pan to weigh it down. 

  5. Bake at 350℉ for 25 minutes. Then remove the sheet pan and parchment paper, spray the top of your tortillas with Pam and bake for another 5-10 minutes or until crispy and golden. Slice and serve with desired toppings.
