Tsunami Chips with Goma Dare
Tsunami Chips:
4 cups kettle cooked salted potato chips
2 sheets toasted nori or 4 sheets seaweed snacks, crumbled
2 tablespoons roasted sesame seeds
1 tablespoon toast black sesame seeds
2 tablespoons nutritional yeast
1 teaspoon onion powder
1 teaspoon garlic powder
2-3 dried shiitake mushrooms
½ teaspoon chili flakes
1 tablespoon sugar
½ teaspoon salt
Place everything besides the potato chips in a coffee or spice grinder. Blend until a fine powder forms. You may need to work in batches. Toss in a bowl with the potato chips.
Goma Dare:
6 tablespoons tahini
¼ cup mayonnaise
2 tablespoons soy sauce
1/2 teaspoon sesame oil
3 tablespoons rice vinegar
3 tablespoons mirin
1 teaspoon miso
1 teaspoon chicken bouillon powder
¼ cup sugar
Mix all the ingredients together and top with sesame seeds. Serve with chips and crunchy vegetables
