• 1/2 cup peanut butter

  • 1 teaspoon sesame oil

  • 1/4 cup mirin

  • 1 tablespoon rice vinegar

  • 2 tablespoons sake

  • 2 tablespoons neutral oil

  • 1 clove of garlic, grated

  • Juice of two limes

  • 2 tablespoons maple syrup

  • 1/2 teaspoon salt

  • 1/4 cup hot water (Or until it reaches your desired consistency)

  • One package dried udon noodles cooked according to package directions

Top with:

  • Torn fresh mint

  • Chopped chives or scallions

  • Chili crisp

  • Sliced cucumber

  • Sesame seeds

  1. In a bowl, mix together the peanut butter, Sesame oil, mirin, rice vinegar, sake, oil, garlic, lime juice, maple syrup and salt.

  2. Add in the hot water until the desired thickness is reached.

  3. Toss with your cooked noodles.

  4. Top the noodles with the sliced cucumber, Mint, Chives, Chili oil, and Sesame seeds.

  5. Serve chilled.
