The Perfect Potato Kugel
5 lb Yukon Gold potatoes, peeled
1 large yellow onion, first layer peeled
1 ½ cups oil
6 eggs
1 tablespoon plus 1 teaspoon kosher salt
Preheat the oven to 450 F and fill your 9x13 pan with oil . Place the pan into the oven to heat for about 5-8 minutes.
Place your peeled potatoes in a large bowl of water.
Using the kugel blade* on the food processor, feed all your potatoes and onion into the food processor.
You can also use the fine shredded blade for half of the potatoes and use the s blade for the other half.
Add it to a large bowl with the salt and eggs. Mix thoroughly .
Carefully pour your oil into the bowl. The mixture will sizzle. Shield yourself appropriately.
Mix in the oil and pour into the pan. Bake at 450°F for one hour and reduce to 350°F for another hour.
* A Kugel blade is usually found with the Braun food processor and looks like the image below. If you don’t have a kugel blade you can shred half of the potatoes with the smallest shredding blade and blend half of the potatoes with the “s” blade.
