Malka Green Beans

Malka Green Beans 

  • 1 lb haricot vert or green beans, trimmed 

  • 1/4 cup of good olive oil

  • Juice of two large lemons

  • Juice of one lime

  • One clove of garlic, grated or crushed

  • 1 teaspoon of kosher salt 

  • 1 teaspoon of mayonnaise

  • Coarse salt to top

  1. Blanch green beans or haricot vert in salted boiling water for one minute. Drain and place. immediately into an ice bath.

  2. Whisk the oil, lemon juice, lime juice, garlic, salt and mayonnaise in a bowl until smooth and uniform

  3. Drain the green beans and toss with the lemon dressing.

  4. Top with more salt flaky preferred.

  5. Transferred to a brown paper bag.

*If preparing this in advance, store the dressing and beans separately and toss with the dressing immediately before serving
