Fried Chicken Hot Honey Sandwich
Marinade:
1 package boneless chicken thighs (pargiyot)
1 cup vegan yogurt (or coconut milk mixed with juice of 1 lemon)
⅓ cup vinegar
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
2 tablespoons hot sauce (like franks)
Coating:
1 cup cornflake crumbs
2 cups flour
¼ cup cornstarch
1 teaspoon salt
1 tablespoon paprika
1 teaspoon garlic powder
1 tablespoon dried parsley flakes
1 egg
Oil for frying
Hot honey sauce:
6 tablespoons oil
½ cup honey
3 tablespoons hot sauce of choice
Salt to taste
1 scant teaspoon red pepper flakes
1 teaspoon smoked paprika
¼ teaspoon cayenne pepper
Slaw:
½ cup mayonnaise
¼ cup white wine vinegar
½ teaspoon salt
2 tablespoons honey
1 bag slaw or shredded purple cabbage
Sandwich:
Burger buns
Bread and butter pickles, sliced
Garlic mayo
Red onion, thinly sliced
Instructions:
Chicken:
Remove all cartilage form the chicken and pound flat between two sheets of parchment
Place the yogurt or coconut milk mixture into a shallow pan or ziploc. Add vinegar, garlic powder, onion powder salt and hot sauce. Mix to integrate. Place the chicken inside and toss to coat.
Marinate for 30 minutes or up to 2 days
In a bowl mix together the cornflake crumbs, flour, cornstarch, salt, paprika, garlic powder, and parsley flakes. Place your chicken inside and toss to coat.
Add an egg to your remaining marinade and place your coated chicken back inside.
Then return the chicken back to the flour coating and coat completely.
Heat your oil in a large wide pot to 350 F or until the oil bubbles around a wooden spoon. Place 1-2 pieces into the oil- do not overcrowd the pan. Fry about 3-5 minutes per side or until golden brown and the internal temperature reaches 165 F. place on a cooling rack with a paper towel underneath to avoid it getting soggy.
Slaw:
Mix the honey, vinegar, mayonnaise and salt. Toss with cabbage and set aside.
Hot honey:
Whisk all the ingredients together in a pot, heat over medium heat until a low boil begins. Lower the heat and allow to continue to simmer for 3-5 minutes. Remove from heat, cool for about 10 minutes and then coat the chicken in the sauce.
Sandwich:
Layer your onions on the bottom layer of your bun and top with slaw. Add your chicken. Spread some garlic mayo and add some pickles on the top bun. Stack your bun over your chicken and enjoy!
