Coffee Cake

Crumb:
One and 1/4 cup flour
1 stick vegan butter
1/4 Cup Sugar
1/2 cup brown sugar
1 Tsp Hawaijj or pumpkin pie spice
1 tsp cinnamon
Pinch of salt
Cake:
2 eggs
1 cup of oil
1 cup of vegan yogurt
2 tsp vanilla
1/2 tsp of salt
1/2 tsp baking soda
1 1/2 tsp baking powder
1 cup of sugar
1/2 cup of brown sugar
2 cups flour
Icing:
2 cups confectionery sugar
1/4 c vegan yogurt
2 tsp vanilla
Instructions:
In a bowl mix the crumb ingredients together until a crumb texture forms. Set aside.
Mix all the ingredients for the cake together besides the flour. Then slowly add the flour and whisk just until no flour streaks remain.
Prepare a 9x13 pan with parchment paper.
Pour half the batter into the pan. Top with half the crumb mixture. Layer the remaining batter and top with the remaining crumbs.
Bake at 350F for 50 mins or until a toothpick inserted comes out clean. Cool
Notes:
In a bowl, mix the icing ingredients. If it’s too thick add more yogurt if it’s too thin add more sugar. Drizzle over the cooled cake and serve.
