Carrot Honey Loaf

Ingredients:

  • 1.5 c flour 

  • 1 tsp baking powder 

  • 1 tsp baking soda 

  • ¼ tsp salt 

  • 1 tsp cinnamon 

  • ¼ tsp nutmeg 

  • ½ tsp cardamom 

  • ½ c oil 

  • ½ c honey 

  • ½ cup  brown sugar 

  • 2 eggs

  • ½ c baby carrot food 

  • 1 tsp vanilla extract 

  • 2 cups shredded carrots 


Instructions:

  1. Mix all the dry ingredients in a bowl. 

  2. Mix the wet ingredients in another bowl. 

  3. Whisk the two mixtures together and fold in the shredded carrots 

  4. Pour into a loaf pan lined with parchment paper. 

  5. Bake at 350֯ F for 55-60 minutes or until a toothpick stuck in the center comes out clean 

  6. Frost with optional frosting of desired. 

*To make muffins, bake in muffin tins for 18-20 minutes.

Frosting: 

  • 3 c confectioner sugar 

  • 2 tbsp. honey 

  • ½ tsp cinnamon 

  • 1 stick Butter or vegan butter, room temperature

  • ½ tsp vanilla 

  • 2-4 tbsp. milk of choice 

  1. Whisk together sugar, honey , cinnamon and vanilla until smooth. Add in the milk one tablespoon at a time or until the desired consistency is reached. Spread over cooled cake.
