Carrot Honey Loaf

Ingredients:
1.5 c flour
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
1 tsp cinnamon
¼ tsp nutmeg
½ tsp cardamom
½ c oil
½ c honey
½ cup brown sugar
2 eggs
½ c baby carrot food
1 tsp vanilla extract
2 cups shredded carrots
Instructions:
Mix all the dry ingredients in a bowl.
Mix the wet ingredients in another bowl.
Whisk the two mixtures together and fold in the shredded carrots
Pour into a loaf pan lined with parchment paper.
Bake at 350֯ F for 55-60 minutes or until a toothpick stuck in the center comes out clean
Frost with optional frosting of desired.
*To make muffins, bake in muffin tins for 18-20 minutes.
Frosting:
3 c confectioner sugar
2 tbsp. honey
½ tsp cinnamon
1 stick Butter or vegan butter, room temperature
½ tsp vanilla
2-4 tbsp. milk of choice
Whisk together sugar, honey , cinnamon and vanilla until smooth. Add in the milk one tablespoon at a time or until the desired consistency is reached. Spread over cooled cake.
