Gluten Free Brownies

  • ½ cup tapioca starch 

  • 2 tbsp hot water 

  • 1 cup sugar

  • ⅔ cup Dutch cocoa powder, sifted 

  • 1 cup confectioners sugar, sifted 

  • ½ cup chocolate chips 

  • 1 teaspoon salt 

  • 2 eggs 

  • ½ cup grapeseed oil 

  • 1 teaspoon vanilla 

  1. In a bowl, mix the tapioca starch and water to form a paste. Set aside. 

  2. In another bowl, mix in the sugars, cocoa and salt. Add in the chocolate chips, eggs, oil, vanilla and tapioca starch paste. Mix to integrate. 

  3. Pour into a greased 8x8 pan. Bake at 325°F for 40-45 minutes or until an inserted toothpick comes out clean. 

  4. Sprinkle with confectioners sugar if desired.
