Gluten Free Brownies
½ cup tapioca starch
2 tbsp hot water
1 cup sugar
⅔ cup Dutch cocoa powder, sifted
1 cup confectioners sugar, sifted
½ cup chocolate chips
1 teaspoon salt
2 eggs
½ cup grapeseed oil
1 teaspoon vanilla
In a bowl, mix the tapioca starch and water to form a paste. Set aside.
In another bowl, mix in the sugars, cocoa and salt. Add in the chocolate chips, eggs, oil, vanilla and tapioca starch paste. Mix to integrate.
Pour into a greased 8x8 pan. Bake at 325°F for 40-45 minutes or until an inserted toothpick comes out clean.
Sprinkle with confectioners sugar if desired.
