Salmon Patties
3 5 oz can salmon, drained*
1 jarred roasted red pepper, pat dry and finely diced
¼ small red onion, finely diced (about ¼ cup)
1 egg
2 tablespoons Lieber's Garlic Mayo, plus more for serving
1 tablespoon Lieber's dried parsley
A pinch of salt
Liebers panko crumbs
2 tablespoons Lieber's Everything Mix
Liebers avocado oil
Preheat the oven to 400 F.
In a large bowl, mix the salmon with the pepper, red onion, egg, garlic mayo, dried parsley, and salt.
In another bowl, mix the panko with the everything mix. Shape patties of the salmon mixture with your hands. It will be loose. Coat in panko by dropping it gently into the panko bowl and then gently placing more crumbs on top.
Place a sheet of parchment over a sheet pan and drizzle some oil onto the sheet pan. Place your patties on the sheet pan and bake for 15 minutes. Flip your patties and cook another 10 minutes.
They should be golden brown and crispy.
Serve with the garlic mayo and enjoy.
*Note: You can use fresh salmon for this. Bake the salmon at 350 F for 15 minutes until fully cooked through before adding it to the remaining ingredients. Your salmon should be equal in ounces (approx 15 oz. total)
