Light and Bright Soup
3-4 tbsp oil
1 large onion, diced
3-4 cloves garlic, grated
2 packages frozen peas
4 cups chicken or vegetable broth
½ cup cashew milk
2 tbsp nutritional yeast
2 tbsp honey or to taste
¼ cup mint leaves
Salt and pepper to taste
1 tablespoon rice vinegar
Crushed potato chips
Sliced scallions or chives
Instructions
In a large pot, heat the oil. Add the onion and sauté 3-5 minutes over medium heat until translucent. Add the garlic and sauté another minute.
Add in the peas and sauté for 5-8 minutes or until bright green and slightly softened.
Add in the broth, milk, yeast, honey, and red pepper flakes. Season with salt and pepper to taste.
Simmer for 15-20 minutes. Blend together with mint leaves and vinegar until smooth.
Return to the pot to warm or place in the fridge to chill. Serve with a topping of sliced scallions/chives and crushed potato chips.
