Light and Bright Soup

Light and Bright Soup
  • 3-4 tbsp oil 

  • 1 large onion, diced 

  • 3-4 cloves garlic, grated 

  • 2 packages frozen peas

  • 4 cups chicken or vegetable broth

  • ½ cup cashew milk 

  • 2 tbsp nutritional yeast 

  • 2 tbsp honey or to taste

  • ¼ cup mint leaves  

  • Salt and pepper to taste 

  • 1 tablespoon rice vinegar 

  • Crushed potato chips 

  • Sliced scallions or chives 


Instructions

  1. In a large pot, heat the oil. Add the onion and sauté 3-5 minutes over medium heat until translucent. Add the garlic and sauté another minute. 

  2. Add in the peas and sauté for 5-8 minutes or until bright green and slightly softened. 

  3. Add in the broth, milk, yeast, honey, and red pepper flakes. Season with salt and pepper to taste. 

  4. Simmer for 15-20 minutes. Blend together with mint leaves and vinegar until smooth. 

  5. Return to the pot to warm or place in the fridge to chill. Serve with a topping of sliced scallions/chives and crushed potato chips.
