Zucchini Mozzarella Sandwich
1 zucchini peeled into strips
Zest of 1 lemon
2 tbsp olive oil
½ tsp red chili flakes
Salt and pepper to taste
3 small baguettes
5 tbsp pesto, divided
1 cup mixed greens, divided
¼ cup mint leaves, divided
1 package fresh mozzarella, sliced and divided
Optional: 4 tbsp butter
Mix the zucchini with the lemon zest, olive oil, chili flakes and salt and pepper. Allow to marinade for 15-20 minutes.
Slice the baguettes in half and spread pesto on half of the bread. Layer a few slices of mozzarella on top.
Add some greens and mint over the other side of the sandwich. Place a nice helping of marinated zucchini on the top of the lettuce. Close the sandwich.
To toast (optional): Heat the butter in a pan over a medium flame. Place the sandwich into the pan. Using another heavy pan, place it on top and press. Heat for 5-8 minutes per side or until the sandwich is golden and the cheese is melted. Slice and serve.
