Zucchini Mozzarella Sandwich 

  • 1 zucchini peeled into strips 

  • Zest of 1 lemon 

  • 2 tbsp olive oil 

  • ½ tsp red chili flakes 

  • Salt and pepper to taste 

  • 3 small baguettes 

  • 5 tbsp pesto, divided 

  • 1 cup mixed greens, divided 

  • ¼ cup mint leaves, divided 

  • 1 package fresh mozzarella, sliced and divided 


Optional: 4 tbsp butter 


  1. Mix the zucchini with the lemon zest, olive oil, chili flakes and salt and pepper. Allow to marinade for 15-20 minutes. 

  2. Slice the baguettes in half and spread pesto on half of the bread. Layer a few slices of mozzarella on top.

  3. Add some greens and mint over the other side of the sandwich. Place a nice helping of marinated zucchini on the top of the lettuce. Close the sandwich. 


  1. To toast (optional): Heat the butter in a pan over a medium flame. Place the sandwich into the pan. Using another heavy pan, place it on top and press. Heat for 5-8 minutes per side or until the sandwich is golden and the cheese is melted. Slice and serve.
