Protein Muffins

Protein Muffins 

  • 1 1/4 cup whole wheat flour 

  • ½ cup almond flour 

  • 1/4 cup Protein Powder

  • 2 packages collagen powder

  • ½  cup coconut sugar 

  • 1 teaspoon baking powder 

  • ½ teaspoon baking soda 

  • ½ teaspoon salt 

  • 1 ripe banana 

  • ¼ cup maple syrup 

  • 1 teaspoon vanilla 

  • 2 eggs

  • ½ cup yogurt or vegan yogurt 

  • ¼ cup shredded coconut 

  • 1 cup blueberries 

Hemp Sprinkles: 

  • 2 tbsp whole wheat flour 

  • 1 teaspoon vanilla 

  • 2 tbsp coconut sugar 

  • A pinch of salt 

  • ¼ teaspoon cinnamon 

  • ¼ cup hemp seeds 

  • 1 tbsp oil 


  1. In a large bowl mix the dry ingredients together. Create a well and add in all the wet ingredients besides the blueberries. Mix to combine until no flour streaks are seen. Fold in the blueberries. 

  2. Line a muffin tin with muffin liners and fill each about ¾ of the way full of batter. 

  3. In a small bowl mix all the sprinkle ingredients together. Top each muffin with some of the sprinkle. 

  4. Bake at 350°F for 18-20 minutes or until baked through and golden. 

  5. Cool for 5 minutes before enjoying.
