Protein Muffins

Protein Muffins
1 1/4 cup whole wheat flour
½ cup almond flour
1/4 cup Protein Powder
2 packages collagen powder
½ cup coconut sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ripe banana
¼ cup maple syrup
1 teaspoon vanilla
2 eggs
½ cup yogurt or vegan yogurt
¼ cup shredded coconut
1 cup blueberries
Hemp Sprinkles:
2 tbsp whole wheat flour
1 teaspoon vanilla
2 tbsp coconut sugar
A pinch of salt
¼ teaspoon cinnamon
¼ cup hemp seeds
1 tbsp oil
In a large bowl mix the dry ingredients together. Create a well and add in all the wet ingredients besides the blueberries. Mix to combine until no flour streaks are seen. Fold in the blueberries.
Line a muffin tin with muffin liners and fill each about ¾ of the way full of batter.
In a small bowl mix all the sprinkle ingredients together. Top each muffin with some of the sprinkle.
Bake at 350°F for 18-20 minutes or until baked through and golden.
Cool for 5 minutes before enjoying.
