Recipe:
4 ears of corn
1/4 c Greek yogurt
1/4 cup mayonnaise
Zest of 1 lime
Juice of 1/2 lime
1 clove garlic, minced
1/8 tsp cumin
1/4 tsp paprika
1/4 tsp chili powder
1/8 tsp paprika
Pinch of salt
Pinch of cayenne pepper
Cilantro, chopped
Feta crumbled
Bake the corn in the husk at 400 F on the rack for 30-40 minutes or until soft
Alternatively, grill the husked corn over medium-high heat turning frequently for 10 minutes till char marks form and the corn is soft
In a oblong pan or container mix the mayonnaise, yogurt, spices, lime zest and juice and garlic. Mix and coat the warm corn.
Serve with chopped cilantro and feta sprinkled on top
