Bone In Chicken
1 can chickpeas rinsed and drained
2 lb Yukon gold potatoes in large chunks- skin on
1 head garlic- separated
8 bone in chicken thighs 1 tbsp oil
Juice of 3 lemons
2 tsp brown sugar
2 tbsp mayonnaise (thomy or kewpie preferred)
1 tsp harissa
1/2 tsp chili flakes
1 tbsp soy sauce
1 tbsp tomato paste
Salt and pepper to taste
Garnish
1 tsp cumin seeds
Couple sprigs cilantro
A few dollops dairy free plain yogurt
Mix everything but the garnish ingredients in a large bag or bowl. Marinate for 24-48 hours
When ready to bake spread over a baking sheet so the chicken is skin side up.
Cover and bake 1 hour at 425F
Uncover and bake for 20-25 minutes until the skin is golden and potatoes are cooked through.
Serve with cumin seeds, dollops of yogurt, And cilantro.
